- 1 pound chicken breast
- 2 tablespoons Cajun seasoning
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan
- 1 medium onion, diced
- 2 cloves garlic, minced
Instructions
- Prepare the chicken: Cut the chicken into even pieces and mix with Cajun seasoning, set aside.
- Heat a large skillet over medium heat. Add oil and chicken; cook until golden and cooked through (about 6-7 minutes). Remove and set aside.
- Sauté the onion and garlic in the same pan until soft (about 2-3 minutes).
- Add the orzo to the pan and stir to coat with flavors.
- Pour in the chicken broth and cream; stir and bring to a boil. Reduce heat and simmer until the orzo is tender (about 10 minutes).
- Stir in the Parmesan and return the chicken to the pan; mix until well combined and creamy.
- Serve hot, garnished with fresh herbs or additional Parmesan if desired.
Notes
Prepare the recipe up to step 5 in advance and store in the fridge. Reheat it gently in a pan when ready to serve.
