Description
Aromatic Halloumi Makhani featuring golden-brown fried cheese in a creamy, spiced tomato sauce.

- 250 g Halloumi cheese, cubed
- 2 tbsp oil (vegetable or ghee)
- 1 large onion, finely chopped
- 2–3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tsp cumin
- 1 tsp coriander powder
- 0.5 tsp garam masala
- 1 tsp paprika
- 400 g canned crushed tomatoes
- 200 ml cream
- 1 tsp sugar (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Prepare the halloumi by cutting it into about 2 cm cubes. Heat some oil in a hot pan and fry the cubes until golden brown. Remove from the pan and set aside.
- Sauté the chopped onion in the same pan until soft and translucent (about 5 minutes).
- Add the minced garlic and grated ginger, cooking for about 1 minute until fragrant.
- Toast the spices (cumin, coriander, garam masala, and paprika) briefly for 30 seconds to enhance their flavors.
- Pour in the crushed tomatoes, letting the mixture simmer for about 10 minutes to meld the flavors.
- Stir in the cream, reducing heat, mixing gently.
- Incorporate the fried halloumi cubes into the sauce, simmering for another 5 minutes to absorb flavors.
- Season with salt, pepper, and the optional sugar to taste.
- Garnish with fresh cilantro and serve hot with rice or naan.
Notes
Can substitute halloumi with paneer or tofu for different texture. Optionally, prepare the sauce ahead of time and fry halloumi right before serving.
