Description

This Hawaiian Chicken on the Sheet brings sweet and salty vacation flavors right to your home, blending tender chicken, crunchy vegetables, and fresh pineapple.


Ingredients

  • 1 ½ pounds (700 g) chicken breast, skinless and boneless, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small red onion, sliced
  • 1 ½ cups fresh pineapple chunks (or canned, drained)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon chili flakes (optional)
  • ⅓ cup low-sodium soy sauce
  • ¼ cup pineapple juice (fresh or canned)
  • 3 tablespoons honey (or brown sugar)
  • 2 tablespoons rice vinegar (or apple cider vinegar)
  • 1 tablespoon cornstarch + 2 tablespoons water (optional for thickening)

Instructions

  1. Preheat your oven to 200 °C (400 °F) and line a large baking sheet with parchment paper or lightly grease it.
  2. Spread the chicken pieces, chopped peppers, onion slices, and pineapple chunks evenly on the prepared sheet.
  3. Drizzle the olive oil over the ingredients and add minced garlic, salt, pepper, paprika, and chili flakes. Mix everything thoroughly to coat each piece.
  4. Roast in the oven for 20–25 minutes, turning the ingredients halfway through cooking to ensure even roasting. Check that the chicken reaches an internal temperature of 74 °C (165 °F) and the vegetables are tender.
  5. While the dish is roasting, prepare the sauce by mixing soy sauce, pineapple juice, honey, and vinegar in a small pot over medium heat. Let it simmer for 3–4 minutes. Add cornstarch mixture if you desire a thicker sauce.
  6. After baking, drizzle the sauce over the chicken and vegetables or serve separately. Garnish with sesame seeds or chopped green onions if desired.

Notes

For extra flavor, marinate the chicken in the sauce for a few hours or overnight. This recipe can also be made in an air fryer, reducing the cooking time.
