- 1 lb (450g) beef sirloin, thinly sliced
- 1 cup kimchi, roughly chopped
- 1 medium yellow onion, sliced
- 1 cup bell pepper (any color), sliced
- 4 slices provolone or American cheese
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons vegetable oil
- Optional: minced garlic and sugar for marinade
Instructions
- Prepare the beef, onion, and bell pepper by slicing them thinly.
- Mix soy sauce, sesame oil, garlic, and sugar in a bowl for marinade. Add beef and marinate for at least 15 minutes.
- Heat vegetable oil in a large pan over medium-high heat. Add onions and bell peppers, sautéing for about 5 minutes until soft.
- Push the vegetables to one side of the pan and add the marinated beef. Cook for 5 minutes until browned, stirring occasionally.
- Add the chopped kimchi to the cooked beef and mix thoroughly, cooking for an additional 2 minutes.
- Toast hoagie rolls until golden, then fill with the beef-kimchi mixture and top with cheese. Place in the oven for about 2 minutes until cheese is melted.
Notes
For added flavor, marinate the beef overnight. Adjust the amount of kimchi to control the spice level.
