- 1 lb beef steak (about 1 inch thick)
- 3 tbsp olive oil
- 2 garlic cloves (chopped)
- 1 tbsp fresh lemon juice
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
- 2 cups cooked grains (e.g., brown rice, quinoa, or cauliflower rice)
- 1 cup roasted chickpeas (optional)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- ½ red onion (thinly sliced)
- ½ cup Kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, well-drained)
- 1 tbsp fresh lemon juice
- 1 garlic clove (chopped)
- 1 tbsp fresh dill (chopped)
- 3 tbsp olive oil (for dressing)
- 2 tbsp fresh lemon juice
- 1 tsp honey (omit for Whole30)
- ½ tsp dried oregano (for dressing)
Instructions
- Marinate the steak: In a large bowl, combine olive oil, chopped garlic, lemon juice, oregano, thyme, salt, and pepper. Dip the steak in the marinade and let it marinate for at least 30 minutes.
- Prepare the tzatziki: Mix Greek yogurt, grated cucumber, lemon juice, chopped garlic, and dill in another bowl. Season with salt and pepper and chill.
- Make the vinaigrette: In a small bowl, combine olive oil, lemon juice, honey, chopped garlic, and oregano.
- Sear the steak: Heat a pan or grill over medium-high heat. Sear the steak for 4–5 minutes per side until desired doneness.
- Assemble the bowl: In a large bowl, layer cooked grains, sliced steak, chickpeas, halved cherry tomatoes, diced cucumber, sliced onion, Kalamata olives, and feta cheese. Drizzle tzatziki and vinaigrette over everything.
Notes
For a vegan option, replace beef steak with grilled vegetables like eggplant or zucchini. Prepare ingredients in advance to save time on serving day.
