- 4 chicken breasts
- 200 g Brie cheese
- 100 g cranberry sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., thyme or rosemary)
Instructions
- Preheat the oven to 190 °C (375 °F).
- Carefully slice each chicken breast open on the side to create a pocket.
- Stuff the pocket with about 50 g of Brie cheese and a generous tablespoon of cranberry sauce.
- Season the outside of the chicken breasts with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Cook the stuffed chicken breasts for 4–5 minutes on each side until golden and crispy.
- Transfer the chicken to a baking dish and bake for 20–25 minutes until cooked through.
- Garnish with fresh herbs before serving.
Notes
You can fill the chicken breasts a day ahead and store them in the fridge. Use a meat thermometer to ensure the internal temperature reaches 75 °C (165 °F).
