Description

Ingredients

  • 2 cups zucchini, grated
  • 2 cups almond flour
  • 1/2 cup cheese, grated (e.g., mozzarella or cheddar)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)

Instructions

  1. Preheat the oven to 180°C and line a baking sheet with parchment paper.
  2. Wrap the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  3. Mix the drained zucchini with almond flour, cheese, eggs, baking powder, salt, and optional spices in a large bowl until combined.
  4. Shape the mixture into small bagel forms and place them on the baking sheet.
  5. Bake the bagels for 20-25 minutes until golden brown and crispy.
  6. Remove from the oven, let cool briefly, and enjoy as desired – plain or with toppings.
